Hand harvested early in the morning to ensure that all those excellent flavours are captured in maximum quantity, before each bunch is de-stemmed before pressing. Flavours of green fig, apples and sweet melon are easily found, with a tingle of wood from the chardonnay catching a glimpse in the second half. Alkie describes this reasoning as, “…the Chardonnay enhances the distinct green-fig flavour of the Sauvignon Blanc, which in return retains the tropical fruit in the Chardonnay to blend perfectly.”
